Their are countless ways to serve and prepare the minerally-nutritious, low-calorie, low-cholesterol oyster; serving the versatile oyster either raw on the half-shell, fried, baked or grilled is certain to pleasure the palate.
 
Fresh, unshucked (unopened) oyster shells can easily be opened by scrubbing the shell, then inserting an oyster or kitchen knife along the shell slit, and cutting the muscle along the shell bottom. Now that the oyster is free, you are ready to prepare a dish. If you are in the mood to serve a raw oyster on the half shell, the only addition to preparation would be removing the top shell and serving the oyster housed on the bottom shell with some crackers, fresh lemon juice and a touch of Tabasco sauce.
 
A fried oyster calls for a dozen shucked oysters, two beaten eggs, one cup of bread crumbs, three tablespoons oil, a dash of salt and pepper. Toss the oysters in the beaten egg, drop and make certain covered in bread crumbs, heat the oil in a pan for a minute or two, add the oysters and brown on both sides. Remove and serve with fresh lemon and Tabasco sauce. Delicious!
 
Pop the oysters on half shell on a baking pan in an oven set at 475 degrees for about ten minutes. On the side you will have two tablespoons melted butter, two tablespoons flour, one cup of the oyster juice, stir until mixed; dab each oyster with this mix, add a little bit of bread crumbs to each and serve with some lemon juice and Tabasco, if desired.
 
An unshucked oyster wrapped in foil with holes tastes great when grilled over hot coals, ready when the shell pops open. Butter and lemon accompany nicely.

Grouper is a large-bodied big-mouth fish which is most often harvested from the Atlantic Ocean off the coast of southern Florida but especially in the Caribbean Sea near the Bahamas. The name grouper appears to be an Angelicanized spelling of the Portugese word 'garoupa meaning 'fish'. While there are several members of the grouper family, those often gracing restaurant menus are red and black grouper.
 
Black grouper also called 'Gag' has a taste all it's own to many people but in general it is close to the taste of halibut. Red grouper has a milder taste with a hint of natural sugar sweetness.
 
One of the most popular ways to prepare grouper is to cut the fish into about 1 inch strips which are then sauted for 2 to 5 minutes per side in very hot oil. The most common name for this delicacy in the Bahamian islands is 'Grouper Fingers.'
 
Another delightful way to prepare grouper is by roasting or baking. One popular recipe served in many seafood eateries is made by placing grouper filets in a large rectangular baking dish after being covered with a crumb mixture consisting of ground parmesan cheese, finely diced bell peppers, a small amount of hot pepper such as jalapeno, fresh or canned flaked crabmeat and melted butter. Once the filets are placed in the dish, the crumb mixture is spread on top and baked in a hot (350 to 400°) oven for 30 minutes. This recipe is commonly known as Crab-crusted Grouper.

Mahi-mahi is a mild tasting tropical fish usually found in warm waters. They are frequently found in the Caribbean, the South Pacific, and Southeast Asia. The name of this fish comes from the Hawaiian language which means strong. Mahi-mahi usually fights when fishermen try to catch them and that is how it got its name. Mahi-mahi is used in many dishes and there are many ways to serve it.
 
A heart healthy way of serving mahi-mahi is by sautéing it and serving it with vegetables and brown rice. Adding citrus juices to the fish helps bring out the flavors and is a nice touch to this healthy meal.
